Mediterranean chickpea salad with cucumber, tomato, and fresh herbs

Kim's note

Let the dressed salad sit for 10 minutes before serving — the chickpeas drink up the lemon and olive oil and the whole thing tastes like it took far longer than it did.

Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup fresh flat-leaf parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

How to make it

  1. 1

Combine the chickpeas, cucumber, cherry tomatoes, red onion, olives, parsley, and mint in a large bowl.

  2. 2

Whisk together the olive oil, lemon juice, oregano, salt, and pepper in a small bowl.

  3. 3

Pour the dressing over the salad and toss well.

  4. 4

Let the salad rest for 10 minutes at room temperature so the chickpeas absorb the dressing.

  5. 5

Taste for seasoning — it may want more lemon or salt — and serve.
