Crispy Oat Waffles
Crispy on the outside, tender inside — wholesome oat waffles that hold up to any topping.
Kim's note
Resist the urge to open the waffle iron early — steam still rising means the waffle is still cooking. Wait until the steam slows to a trickle, then lift. That's your crispy waffle.
Ingredients
- 1 tablespoon ground flaxseed
- 3 tablespoons water
- 1 1/2 cups rolled oats, blended into flour
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup plant milk
- 2 tablespoons maple syrup
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- Coconut cream, fresh berries, and maple syrup, to serve
How to make it
- 1
Mix the ground flaxseed and water in a small bowl and set aside for 5 minutes to gel.
- 2
Blend the rolled oats in a blender or food processor until they reach a fine flour. Transfer to a large bowl.
- 3
Add the baking powder, cinnamon, and salt to the oat flour and whisk to combine.
- 4
Add the plant milk, maple syrup, melted coconut oil, vanilla, and the flax egg. Stir until smooth. Let the batter rest for 5 minutes — it will thicken slightly.
- 5
Preheat your waffle iron and brush lightly with coconut oil. Pour in enough batter to fill the iron (usually about 1/2 to 3/4 cup, depending on your iron's size).
- 6
Close the lid and cook until the steam slows noticeably, about 4 to 5 minutes. Do not open early.
- 7
Serve immediately with a dollop of coconut cream, a handful of fresh berries, and maple syrup.
